Duck pie

Preparation

•  Cook the duck in a large pan with 1 onion spiked with the cloves, the carrot, salt, pepper and sprig of mint.
•  Leave to cook over a low heat until the duck is well cooked.
•  Remove from the heat, break up the duck meat and strain the remaining liquid and put it aside.
•  In a frying pan brown a small onion in olive oil.
•  Add the broken up duck meat.
•  Mix the corn flour with a little of the strained liquid, add to the duck and leave to thicken until the gravy becomes thick and creamy.
•  Add salt and pepper to taste.
•  Cut the pastry into 4 equal rectangles.
•  With a knife make an edge round the rectangles, but without cutting the pastry right through.
•  Brush the surface with egg yolk and place in a warm over until the pastry is cooked and has risen completely.
•  Remove from the oven and using a pair of scissors cut out the top that you marked out before with the knife and keep it intact.
•  You now have a rectangular case and a lid for each person.
Fill each of the cases with the duck filling (if necessary heat the filling so that it is served hot at the table) and cover each one with its pastry lid.





Decorate with a sprig of mint and serve with a handful of rucula.

Ingredients Serves 4:
  • 1 rectangular slab of Cozinha Pronta frozen puff pastry
  • 1 duck
  • 2 small onions
  • 1 carrot
  • 1 sprig of mint
  • salt, to taste
  • 6 cloves
  • 6 black pepper corms
  • 1 soupspoon of olive oil
  • 2 dessert spoons of corn flour
  • 1 egg yolk for brushing the top
